100% BLUE WEBER AGAVE
Made from 100% blue weber agaves sourced from the Los Altos (highlands) region to ensure a deep natural sweetness.
COOKING
The agaves are cooked using a high-pressure autoclave; a large pressurized steam injected oven.
EXTRACTION
A “roller mill” is used to crush and shred the cooked agave into smaller pieces, releasing the fermentable sugars.
FERMENTATION
The fermentation of the ‘mosto’ (agave juice, yeast, and water) takes place in stainless steel tanks. The agave fibers are removed prior to fermentation.
DISTILLATION
The ‘wort’ is then distilled twice in stainless steel stills with a copper coil. The first distillation produces a cloudy liquid called the ‘ordinario,’ and the second distillation produces our clear silver tequila.
